Quinoa



I've been wanting to try quinoa for a while now..... I even bought some a few months ago.

But I was scared and the box was collecting dust in my pantry.  I'm a big chicken when it comes to trying new things sometimes, I'm not afraid to admit that.

Today I cooked it and tried it..... um, YUM!  I think this is one "health" food I can get into.

I made this recipe...... but adapted it a litte bit.

Here's what I did......

Ingredients:
2 cups water
1 cup quinoa
1 cucumber, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1/2 pint of grape tomatoes, halved
handful of fresh parsley, chopped
1/2 handful of mint leaves, chopped
2 tablespoons olive oil
juice of one lemon
1/2 teaspoon salt

Bring water to a boil.  Add quinoa and cook for 15 minutes.  Once cooked and cooled, toss with other ingredients.

See, it's that easy..... and it's delicious.  I wanted my salad to be a little more like tabouleh so I added more parsley and more mint which is why I didn't give a measurement for those ingredients.

I divided the recipe into 2 cup servings for lunch this week......


..... not too bad, right?

I love quinoa! I mix it into my green salads and I make a yummy quinoa cereal for breakfast. I like couscous, too.

I'm so glad you posted this. I've been hearing all about quinoa as well but have been hesitant to try it. I actually just bought some the other day and have been looking at recipes on Pinterest. I think I'll try yours, though!

I love quinoa. I sprinkle it on salads or chop up leftovers in it for a quinoa bowl. Love it with feta, cukes + tomatoes too.

My favorite is quinoa w/ tomatoes, green onions, black beans and lite sour cream! So good!
